What is Kaya?

Kaya is a sweet coconut custard made with coconut milk and sugar, thickened with egg and often flavoured with pandan leaf. It’s popular throughout South-East Asia, particularly in Malaysia. The 2 main varieties are one  with caramelised brown sugar, which gives a rich caramel colour, and the other is  tinted green by the pandan that flavours it.

Kaya toast is a popular breakfast treat for Malaysians. It is charcoal-grilled bread topped with thick cold cuts of salted butter and spread generously with thick velvety kaya. This toast is often served with a cup of strongly brewed coffee or tea.
