Ayam penyet is known for its spicy sambal, which is made with a mixture of chilli, tomatoes, garlic, shrimp paste, tamarind and lime juice. Like its namesake, the sambal mixture is then smashed into a paste to be eaten with the dish.
Penyet is the Javanese word for smashed or pressed, hence the name ayam penyet or “smashed chicken”. The idea is to break the fibres, and separate the meat from the bone, to make it easier to eat the chicken with fingers. If the “smashed” fried chicken is the heart of ayam penyet, its soul is the accompanying sambal.
