Homemade Rendang Paste
Ingredients:-
Onions, garlic, ginger, galangal, fresh turmeric, lemongrass, candlenut, dried chilli, bird’s eye chilli), turmeric leaves, kaffir leaves, and dried shrimp.
Methods:-
Blend all ingredients finely or coarsely. This measurement is suitable for 500-gram beef or 1/2 bird chicken.
To get more spicy add cinnamon, cardamom, cloves and star anise when sauté.
To get creamy sauce after sauté the ingredients add meat and coconut milk.
To thicken the rendang sauce add toasted shredded coconut and mixed it well.
