Qaus Dried Anchovies In Spicy Sauce (Sambal Ikan Bilis)
Qaus Dried Anchovies In Spicy Sauce is a special homemade recipe that has been passed down from generations. It is traditionally made without the use of any machines. The raw ingredients for the sauce are pounded using a pestle & mortar and fried on the stove till crispy. The dried anchovies too are cleaned thoroughly and fried till crunchy and crispy.
Let’s Make Spicy Calamari Fried Rice Using Qaus Dried Anchovies In Spicy Sauce
Ingredients:
- 1 Big Squid (Clean Thoroughly And Cut Into Rings)
- 2 To 3 Tablespoons Of Qaus Dried Anchovies In Spicy Sauce (Sambal Ikan Bilis)
- Oil
- Vegetables Of Your Choice (Dice Or Chop To Small Bite Size Pieces)
- 1 Cup Cooked Rice (Use Long Grain Basmati Rice If Possible)
- Chilli Powder
- Turmeric Powder
- Spring Onions And Fried Shallots.
Method:
Step 1
Clean the squid thoroughly and cut into rings. Add some chilli and turmeric powder and let the squid rings marinate in a bowl.
Step 2
Pour some oil in a frying pan or wok and heat it up. Pan fry the squid rings till they are well cooked. Make sure to pan fry both sides. Leave them on a paper towel to cool. (Note: Use only 1 to 2 tablespoons of oil as you are pan frying and not deep frying).
Step 3
In the same pan that you seared the squid rings, add in the Dried Anchovies In Spicy Sauce. You can add more or less according to your preference. Just saute for 1 minute and add in the squid rings. Give a good mix and toss so that every squid ring gets coated with this yummy and tasty sauce.
Step 4
Since all ingredients have been pre-cooked, it will take only another minute or so to be ready. Add in the vegetables and give a good mix. Finally add in the pre-cooked rice and give a good toss and mix. (Note: The same oil that we pan fried the squid rings is used as it already has great umami flavour in it)
Step 5
You can now turn off the heat and the fried rice is ready to be served. Garnish with some spring onions and fried shallots.
