Baked And Crispy Anchovies In Spicy Sauce
Ingredients:
- 1 cup or more Oven Baked Anchovies
- 10 dried red chilies, soaked in warm water and drained
- 4 cloves garlic
- 4 shallots
- 1/2 red onion
- 1 teaspoon salt
- 1 tablespoon palm sugar or white sugar
- 1 teaspoon tamarind paste
- 2 tablespoons ketchup
- Oil for frying
- Water for blending
Method:
- Prepare the sambal paste: In a blender, combine the dried chilies, shallots, garlic, onion, and add some water. Blend until it makes a thick paste. Set aside.
- Heat oil in a wok over medium heat. Fry the paste until it is fragrant. Add some water and let it simmer.
- Combine the tamarind paste, salt, ketchup and palm sugar with the paste mixture in the wok. Taste. If it is too spicy, add more sugar.
- Let it simmer on a lower heat. When it becomes thickened, add in the Oven Baked Anchovies and give it a good mix. If you want it slightly crunchy you can remove it now or else cook another minute or so. It should be done.
- Place the sambal into a serving bowl, and serve immediately with steamed white rice or fried rice.
