Baked And Crispy Anchovies In Spicy Sauce

Ingredients:

  1. 1 cup or more Oven Baked Anchovies
  2. 10 dried red chilies, soaked in warm water and drained
  3. 4 cloves garlic
  4. 4 shallots
  5. 1/2 red onion
  6. 1 teaspoon salt
  7. 1 tablespoon palm sugar or white sugar
  8. 1 teaspoon tamarind paste
  9. 2 tablespoons ketchup
  10. Oil for frying
  11. Water for blending

Method:

  1. Prepare the sambal paste: In a blender, combine the dried chilies, shallots, garlic, onion, and add some water. Blend until it makes a thick paste. Set aside.
  2. Heat oil in a wok over medium heat. Fry the paste until it is fragrant. Add some water and let it simmer.
  3. Combine the tamarind paste, salt, ketchup and palm sugar with the paste mixture in the wok. Taste. If it is too spicy, add more sugar.
  4. Let it simmer on a lower heat. When it becomes thickened, add in the Oven Baked Anchovies and give it a good mix. If you want it slightly crunchy you can remove it now or else cook another minute or so. It should be done.
  5. Place the sambal into a serving bowl, and serve immediately with steamed white rice or fried rice.
