Dendeng is a popular Malaysian dish consisting of thinly sliced meat, typically beef, that is marinated, dried, and then fried or grilled. The meat is thinly sliced and marinated in a mixture of spices such as garlic, ginger, coriander, and galangal, along with soy sauce, sugar, and sometimes tamarind paste for a sweet and tangy flavour. After marinating, the meat is dried either by air-drying or using a food dehydrator until it becomes firm and slightly chewy. Finally, the dried meat is fried or grilled until it becomes crispy and caramelized on the outside while remaining tender on the inside. Dendeng is often served as a savoury snack or accompaniment to rice dishes in Malaysian cuisine.
