Nasi Kerabu Kelantan Kit (Herb Rice Kit)

Nasi Kerabu Kelantan (Herb Rice) is a visually appealing Malay rice dish served with a melange of aromatic fresh herbs, fresh vegetables, condiments, fish and meats. Perhaps the most striking feature of this dish is the blue rice coloured naturally with bunga telang (blue/butterfly pea flower). Some people may find blue rice strange but it is actually a very pleasing blue colour and is quite aromatic.

As the name suggest, this tasty dish originated in Kelantan (Coastal state in West Malaysia). No two servings of Nasi Kerabu is the same. There are some basic ingredients but the rest will depend on availability and what the cook wants to prepare for that day.

Nasi Kerabu Kelantan Kit (Herb Rice Kit)

Nasi Kerabu Kelantan (Herb Rice) is a visually appealing Malay rice dish served with a melange of aromatic fresh herbs, fresh vegetables, condiments, fish and meats. Let’s cook  the Fragrant Blue Rice

Ingredients:

  • Rice from the kit
  • 1 Lemongrass stalk (lightly crushed at the end)
  • 1 to 2 kaffir lime leaves

Method:

  1. Wash the rice 4 to 5 times till water turns clear. Drain the rice and place it in the rice cooker pot. Add lemongrass and kaffir lime leaves.
  2. Mix bunga telang powder (blue/butterfly pea flower) in some warm water. Mix well so that there are no lumps. Strain blue pea flower water over rice in the pot. Add enough water to cover the rice.
  3. Place the rice cooker pot in the rice cooker. Press the start button to cook the rice.

Let’s make a Veggie pickle to go with this Nasi Kerabu Kelantan

Ingredients:

  • 1 Cucumber – sliced thinly after removing seeds
  • 2 onions – thinly sliced
  • 1 Chilli – thinly sliced
  • ½ carrot – thinly sliced
  • 2 teaspoon sugar
  • ½ teaspoon salt
  • 60ml white vinegar

Method:

  1. In a large serving bowl, add the vinegar, sugar and salt. Mix well.
  2. Add in the vegetables and give a good stir and mix.
  3. Refrigerate until ready to be served.

There are a variety of meat dishes or seafood dishes that can be served with Nasi Kerabu Kelantan. Any of those listed below will be delicious to be eaten with the herb rice.

  1. Barbecue Spiced Chicken
  2. Grilled Chicken
  3. Fried Or Grilled Fish
  4. Salted Fish

Putting It Together Before Serving

  1. Line a serving dish with banana leaf (optional). Place a bowl of fragrant blue rice in the middle.
  2. Then arrange prepared fish crackers, fish floss, toasted coconut flakes, protein of your choice, veggie pickle, fish sauce and chilli sauce around the rice.
