Let’s make penne and mixed vegetables pasta with ‘Sos Magic’
Ingredients:
- 3/4 cup penne pasta
- 1/3 cup sliced zucchini
- 1/3 cup sliced fresh carrot
- 4 medium fresh mushrooms, sliced (Use any mushroom of your choice)
- 1/2 small green bell pepper, thinly sliced
- 1/2 small onion, thinly sliced
- 1 tomato, chopped roughly
- 1 small garlic clove, minced
- 2 to 3 tablespoons of ‘Sos Magic’ Multipurpose Cooking Sauce (you can add more or less according to you preference)
- Oil
- Salt
- Coarsely ground black pepper
- Parmesan cheese and parsley for garnish
Method:
- Cook penne pasta according to package directions. Cook it al dante and drain the water away. Save some of the water as it might come in handy later. Leave the pasta to cool.
- Meanwhile, in a large heated nonstick skillet or pan, pour some oil.
- Throw in the zucchini, carrot, mushrooms, green pepper, onion, garlic and saute until crisp-tender.
- Add in ‘Sos Magic’ Multipurpose Cooking Sauce and give a good mix. Do a taste test and adjust accordingly with sauce and seasonongs.
- Add cooked penne pasta to the vegetable mixture and give a good but gentle mix . Add tomato and black pepper and toss gently.
- The pasta dish is now ready. Plate it up and sprinkle with Parmesan cheese and parsley. Enjoy!
