Al Bayt Homemade Lamb Mandy Rice Kit
Lamb Mandy Rice is a rice dish with meat and infused with spices. The meat is usually Lamb or chicken. The term Mandi originates from Arabic because of the dewy soft and moist texture of the meat. It is a very popular dish in all Arabic countries.
How to cook this Homemade Lamb Mandy Rice
Ingredients:
- Basmathi Rice (Included in kit)
- Spices For Rice And Meat (Included in kit)
- 5kg lamb
- 2 big onions (to be sliced thinly)
- 5 pieces garlic (to be sliced thinly)
- 2 green chillies (split in the middle)
- 3 tablespoons of cooking oil
- Aromatic Spices to saute (Cinnamon, cardamom, clove, dried lime)
- Salt to taste
- Yellow food colouring
Method:
Things to prepare ahead for Lamb Mandy Rice:
Lamb
Boil lamb in water with no salt added. Cook until lamb is tender but don’t overcook it. Drain away the broth and leave the lamb pieces alone. Don’t throw away the broth as it will come in handy later.
Basmathi Rice
Soak the Basmathi Rice in water for 20 minutes or more. After that wash the Basmathi rice a few times and drain the water. Leave it aside.
Actual cooking process:
Mandy rice
- Pour the cooking oil in a pan and saute the aromatic spices for a few minutes. Then add in the sliced onions and garlic and saute further. When onion is translucent add in the spices that came with the kit (remember to use both packs and entire content). Saute further for a few minutes and ensure that the flame is in medium heat. Then turn off the flame and leave the mixture alone for a while.
- Place the drained basmathi rice into the rice cooker container. Add in the sauted spice mixture and give a good mix.
- Add 2 teaspoon of the yellow food colouring, 1 ½ teaspoon of salt and the 2 green chillies. Give a good stir.
- Add in 600ml of the broth you had saved earlier to the rice mixture. Give a good stir and add in the lamb pieces. A final mix and the rice is ready to be cooked. Place the rice cooker container in the rice cooker and turn it on.
- When the rice is 80 percent cooked, gently use a fork and fluff up the rice mixture. After fluffing let it cook until timer goes off and rice is done. It is now ready to be served. Plate it up and garnish with coriander leaves, fried shallots and fried cashew nuts.
A sauce to go with this Lamb Mandy Rice
- 2 tomatoes, 2 pieces garlic, 1 teaspoon lemon juice, coriander leaves, birds eye chilli (up to your spicy taste) and salt.
- Blend these ingredients well in a blender without water.
A simple salad to go with this Mandy Rice
- 2 tomatoes and 1 small cucumber (dice them)
- 1 big onion and coriander leaves (slice them thinly)
- In a bowl mix them all up with some salt and black pepper
