Let’s make mushroom in spicy tomato sauce using Spicy Tomato Paste
Ingredients:
- ½ pack spaghetti (Cook al dante following the instructions on the pack. Once cooked, drain away the water. Save 1 cup of the pasta water.
- 2 tablespoons olive oil plus a little for drizzling at the end
- 1 onion sliced thinly
- 4 cloves garlic minced
- 10 pieces shitake mushroom (bloomed in hot water and sliced)
- 1 cup spaghetti cooked water
- 1 pack ‘ADIA’ Spicy Tomato Paste
- A good handful fresh parsley chopped
- Salt and pepper to taste
Method:
- Bring a large pot of water seasoned with salt to a boil. Add the spaghetti and cook according to the directions on the box until al dente. Before draining reserve 1 cup of the cooked pasta water.
- Meanwhile, in a large sauce pan, heat the olive oil over high heat. Add the sliced onions and cook until light golden brown, about 5 minutes.
- Add the garlic and cook another minute to soften. Add the mushrooms and cook until they release their liquid and it evaporates (about 8 to 10 minutes).
- Add ½ pack of ‘ADIA’ Spicy Tomato Paste, 3/4 cup pasta water and chopped parsley. Season with salt and pepper to taste. Reduce heat to medium and cook until the consistency of a thick sauce, about 5 minutes. Remember to do a taste test and adjust accordingly.
- Transfer the spaghetti to the sauce pan with the spicy tomato sauce. Toss until pasta is well coated with the yummy sauce. If it seems too thick, add more pasta water as needed to loosen.
- The pasta is now ready to be served. Enjoy!
